The Kangaroo Fillet is served with pear-cider caramel jus, mushroom pâté and parsnip cream. The kangaroo is cooked perfectly tender. The pear-cider and caramel jus is rich in both colour and flavour, with a tart sweetness that contrasts beautifully with the light flavours of the parsnip cream. When paired, all the flavours mingle perfectly to enhance the richness of the tender kangaroo meat and create a delicious and decadent dish.

The Blue Swimmer Crab Costini has blue swimmer crab, creme friache, chives, bottarga and salmon pearls on top of thin slices toasted, crusty bread. The crab has strong flavours and a rich, creamy texture which pairs well with the crispness of the toasted bread. The salmon pearls add a salty taste to the dish and explore with flavour in your mouth whenever you take a bite.

Baked Cheese is the ultimate dish to pair with wine, it’s creamy and decadent flavours pairing with rich reds in the winter and contrasting with light whites in the summer. The Baked Cheese is a creamy brie with red wine, truffle, confit garlic, thyme and chicken fat roasted potatoes. The potatoes are crispy and perfect for dipping into the cheese. Garlic and truffle give the dish beautiful flavours and strong aromas which make your mouth water.

The Market Fish Crudo is thin slices of raw fish atop a bed of lime, macadamia, crisp salt bush and parsley. The crunch of the macadamia, the crispness of the salt bush and the silkiness of the market fish make for a variety of texture that play together on the tongue. The combination of tangy lime, sweet macadamia and salty herbs mingle on the palate and create a gorgeous taste sensation.
