The Maid, one of the city’s most iconic hotels, have released a new summer menu. Cleverly named “Maid for Summer”, the new signature dishes offer a new range of fresh flavours and mouth watering classic combinations. Chef Sam Spiniello uses locally sourced, high quality South Australian produce and has prepared a light and ravishing offering for the summer. Spiniello began his culinary love affair as sous chef at Crusoes, the multi award winning Lakes Resort Hotel restaurant. He’s also had the opportunity to work with Chefs Greg Fox and Jamie Pavley who have influenced his flavour combinations and presentation skills. Adelaide Food Central, along with other guests, were invited to sample the new summer menu with all food and drink being provided free of charge.
The Hendricks Cured Tasmanian Salmon was served with baby capers, dill and creme fraiche. The inclusion of beetroot during the curing process gives the salmon a beautiful red colour. Its texture was silky and smooth, and the capers, dill and creme fraiche were a tried and true combination.
The Paroo Kangaroo Fillet, prepared sous-vide at 57 degrees Celsius, was served medium rare with herb and pepper sour cream, duck fat roasted kipfler potatoes and finished with radish and snow pea tendril. The meat was lightly browned on the outside with a lovely pinkish centre. The kangaroo was juicy and succulent, and full of flavour.
The gluten free Vietnamese Pork Belly combines a tantalising mix of mint, coriander, carrot, cucumber and nam jim dressing. The pork belly was melt in your mouth with perfect crackling skin. The pork sat on a bed of fresh and crisp Asian herbs, all coupled with a delicious dressing. Light and refreshing, and perfect for the summer weather!
