Sammy’s On The Marina – Bremerton Wine Dinner

Time flies when you’re having fun! Did you know the last Bremerton Wines Dinner at Sammy’s On The Marina was about 5 years ago? Both businesses have evolved since then and tonight they collaborated once again with a sumptuous five course degustation.

Upon arrival at the event, I was graciously handed a glass of NV Dulcie Sparkling Pinot Chardonnay. The experience that followed was truly delightful. The wine presented a pale golden hue that caught the light beautifully, hinting at the effervescence within.

The first sip revealed a well-balanced and crisp profile. The initial notes of ripe apples and pears danced on my palate, creating a refreshing and subtly fruity entrance. As the bubbles gently caressed my tongue, the Chardonnay characteristics began to shine through, offering a soft and creamy texture that added depth to the wine’s overall character.

The Seafood Espresso was a captivating symphony of flavours. Delicate sugar-cured salmon, succulent prawns, and a crispy sourdough crouton danced in harmony. The surprise came in the form of green tea bubbles that added a playful and refreshing twist. Paired with the 2021 Special Release Vermentino, the dish elevated to perfection. The wine’s zesty notes complemented the seafood impeccably, while its floral undertones resonated with the green tea essence. A remarkable union that left a lingering impression of a sublime culinary journey.

The Coffin Bay Oysters, adorned with cucumber caviar, passionfruit-lime syrup, and flying fish roe, were an oceanic delight. Each briny bite was a fusion of textures and flavours, a true indulgence for the senses. Paired with the 2022 Special Release Fiano, the experience was elevated to new heights. The wine’s crisp acidity perfectly cut through the oysters’ richness, while its citrus and floral notes harmonized with the zesty syrup. A sublime marriage of sea and vine, leaving a lasting impression of culinary finesse.

The Bean Curd Roll, an exquisite blend of Murray Valley pork and sea scallop mince encased in a delicate bean curd layer, showcased culinary artistry. The crisp outer layer yielded to a succulent filling, a harmonious marriage of flavours and textures. Complementing this masterpiece were preserved vegetables – thinly sliced carrots and daikon – adding a refreshing crunch. The black vinegar chili oil added a tantalising kick. Paired with the 2020 Special Release Tempranillo Graciano, the dish was taken to new heights. The wine’s robust character balanced the dish’s complexity, resulting in an unforgettable gastronomic experience.

The Double Cooked Wagyu Short Ribs were a symphony of indulgence. The tender Wagyu ribs, artfully accompanied by white truffle button mushrooms, danced on the palate with rich umami. A medley of greens – broccoli, snow peas, and spinach – added a fresh counterpoint. Atop a luscious bed of mash potato and gravy, the dish achieved sublime comfort. Paired with the 2017 Walters Reserve Cabernet Sauvignon, the experience was elevated. The wine’s bold character complemented the richness of the dish while its intricate notes resonated with the truffle and greens. An opulent delight.

The Fromage Confetti of Fruits and Lavosh was a sensory masterpiece. Blue cheese and brie, exquisitely paired with delicate lavender-hued lavosh, created a harmonious balance of creamy and tangy. The thin slices of dried apricot, apple, and dates added bursts of natural sweetness. Paired flawlessly with the NV Mistelle Fortified Chardonnay, the experience reached sublime heights. The wine’s rich complexity matched the cheeses, while its fortified nature highlighted the fruity confetti. A symphony of flavours that lingered, offering a sweet yet savoury finale to a remarkable culinary journey.

Sammy’s On The Marina has come a long way since the last Bremerton Wines Dinner, and to say the evening was amazing would be an understatement. We had a high quality meal matched with equally good Bremerton Wines.
