An Exceptional Evening: Hentley Farm Wine Dinner at Sammy’s on the Marina

Sammy’s on the Marina hosted an unforgettable Hentley Farm Wine Dinner, pairing some of South Australia’s finest wines with an inspired coastal menu.

The evening opened with 2025 Blanc de Noir, beautifully matched with Coffin Bay Oysters and Finger Lime — a bright and elegant start that highlighted the wine’s crisp texture and delicate fruit.

Next came the 2025 Mt Crawford Riesling, served alongside Marinated and Grilled Southern Calamari with Spicy Chickpeas, Lemon and Coriander. The freshness of the Riesling perfectly balanced the gentle heat and citrusy lift of the dish.

The third course introduced the 2024 Old Legend Grenache, paired with Egg Orecchiette and SA Lamb Ragout topped with Pecorino Cheese — a comforting, richly layered combination that showcased both the depth of the Grenache and the heartiness of local lamb.

For the main course, diners enjoyed both 2023 The Beauty Shiraz and 2023 The Beast Shiraz, served with Chargrilled Wagyu Striploin, Celeriac Cream and Jus. This duo of Shiraz offered a fascinating contrast — elegance and finesse from The Beauty, power and intensity from The Beast — both elevated by the perfectly cooked Wagyu.

Dessert was a luxurious finish: Dark Chocolate Mousse with Maldon Salt Flakes and Truffle Scent, paired with the 2025 Disgorge Black Beauty Shiraz. The dark chocolate and truffle notes entwined beautifully with the bold, velvety Shiraz to close out the night on a decadent note.

Sammy’s On The Marina have outdone themselves once again. We experienced five amazing courses matched with Hentley Farm’s outstanding wines.
