One of the newer Cibo’s in the city is located on Waymouth Street on the ground floor of the Gallery building. A popular destination among nearby city workers for their coffee, they also offer a selection of sweet and savoury items to satisfy your hunger. For lunch on this occasion, I ordered the Focaccia Pollo which is a chicken focaccia with sundried tomato, pesto and spinach. The focaccia was grilled to a light golden brown and the morsels of chicken were tender and succulent. The sweetness of the sundried tomatoes was well balanced by the zesty flavour of the pesto. A simple and delicious ingredient combination. For under $10, it’s a value for money lunch option.
